Good Food: How to Make Mixed Bean Salad and a WIP
Last night, dinner was a Mixed Bean Salad with a tuna steak. And the six-year-old was outraged and refused to eat it. She ended up with toast and cheese!
Mixed Bean Salad
1 Can 3 Bean Mix (next time I will soak the dried beans myself, because I hate how much salt is added to the cans)
1 Corn Cob (steamed and the corn cut off it)
1/2 Red Capsicum chopped finely
1 tomato chopped finely
1/2 red onion chopped finely
1 handful fresh coriander (roughly broken into pieces)
Juice of 1 lemon
1 Tablespoon Olive Oil
How to Make
Add the coriander, lemon juice, oil into into a glass an stir it around.
Add all the other ingredients into a bowl and mix, stir in the dressing. And there it is! Now how easy was that?
This is enough for about foiur people and there was oodles left over so I had it for lunch today also!

And here is my WIP. It is taking a lot longer than an hour but it is easy and so much fun to make. That is all I am giving away for now.
When it is finished I will post it under “Slow Craft” on this site.

Also I could do with some more great healthy, fat-free recipes to add to the repertoire.

A braided rug??

Was it really that easy to guess. I started sewing it together last night and it is gorgeous. It will become our new doormat, to wipe your feet on when you walk into the house. I am going to teach my daughter to braid tonight so that she can help.
