Day 3 April Food Month: Mia’s Salsa
Five o’clock arrived tonight and we were still full from our brunch at a lovely French cafe. And today we made a quick visit to Subiaco markets and piled up on some seriously gorgeous fresh fruit and vegetables. So with both of these in mind, I decided that salsa and leftovers would be dinner. This is not a bad thing. This salsa is so yummy. The textures, the aromas and the tastes are addictive….
How to Make Salsa
For the salsa I used four tomatoes, 1/2 purple onion, 1/2 yellow capsicum, 1 yellow paprika. Cut these ingredients into very small chunks and mixed them together in a serving bowl. I then added half a handful of fresh mint and half a handful of fresh coriander – I just ripped them up.
How to Make the Dressing
For the dressing I added the juice of 1 1/2 limes, 3 cloves of garlic chopped into small pieces, 1/2 inch of ginger chopped finely, 2 teaspoons of fish sauce and 1/4 cup water. I then grated a dessertspoon of palm sugar into it. I love the aroma and watching the palm sugar melt into dressing. It is important to continually taste the dressing and make sure that you get a great balance between the sweet and sour flavours. When it is perfect, pour it onto the salsa, mix it up. Have it alongside a bowl of corn chips, scoop up the salsa on the chips.
This is really my favourite type of eating, fresh, raw foods. And I love the Thai flavours. I love the smell of fresh mint and coriander together.
What to cook tomorrow? We’ll be using up more of our fresh supplies from the Markets. Maybe using the baby beetroot – any recipes? Feel free to share.
